GASTRONOMY

There exist in the island not only restaurants of different nationalities but also a wide selection of places where the visitor can enjoy the wonderful specialities of the aera.
The fact that this is mainly a fishing and cattle-rasing town, it is obvious that the most important ingredient is fish, cooked in every form such as in stocks, in salt,cooked in a "sancocho",etc. all of wich is accompagnied by "papas arugadas con mojo"(boiled baby patatoes whith a special red piquant sauce) the spicy Canarian sauces made of oil, vinegar,salt, and most of all, garlic.
Mojo verde is green,and made with herbs. Mojo rojo gets its red colour from paprika. Sometimes, mayonnaise is added to mojo.

Meats such as kid ,goat and fried pork are very much appreciated .
A special mention to the quality of cheeses manufactured with goat and sheeps milk of the area: soft ,semi-soft, and cured.

As the marine fauna off the coasts of Fuerteventura comprises around 1,500 species, fishing even close to land produced a good living. Among the most delicious fish on the menu in Fuerteventura are (among many others) VIEJA (parrot fish) CHERNE (wreck fish), CABRILLA ( sea bass), PEZ ESPADA (sword fish) and MERLUZA (hake).
In restaurants, the fish is mainly filleted and deep-fried or fried. It is served with salad and PAPAS ARUGADAS or simply french fries.
With the advent of tourism,numerous restaurants, bars and bistros opened in the holiday centres, offering intenational cuisine. The menus are almost all in three languages so choosing and ordering is not a probleme .

A littel footnote on coffee: CAFFE CON LECHE (coffee with milk) is about half filled with hot, frothy milk; CAFE SOLO is an espresso; CAFE CORTADO is normal coffee with a little milk or sugares condensed milk, in an epresso cup or little glass.

We are positive that when you taste some of these dishes it will delight your palate.
